Indian Chickpea & Squash Salad

Spice up snack time with our Indian Chickpea Salad! This vibrant dish is packed with protein, colorful veggies, and a burst of Indian spices – a fun and healthy way to explore new flavors.


Ingredients

  • 4 CUPS Chickpeas, cooked & chilled

  • 2 CUPS Roasted desi summer squash, medium diced & chilled

  • 2 CUPS Roasted Zucchini, chilled & diced

  • 1 TBSP Garam masala

  • 1 TBSP Indian curry powder

  • 1/4 CUP Olive oil

  • 2 TBSP Malt vinegar

  • Salt to taste

Method

  1. In a large mix bowl, combine the garam masala, curry powder, olive oil, and malt vinegar. Whisk until the dry ingredients begin to rehydrate and create a aromatic dressing.

  2. Add the chickpeas, desi summer squash, and carrots coins to the mixing bowl. Toss to coat with the aromtic dressing, finishing with salt to taste.

  3. Serve immediately or cover and let rest overnight in the refrigerator.
