Method

  1. Cut the stretch bread in half length wise then cut in half width wise so you have four long flat bread quarter pieces.

  2. Place the flat bread quarter pieces crust side down.

  3. Drizzle half of the olive oil over the four pieces of bread evenly.

  4. Cut the tomatoes in half from stem to flower end and core out the stem.

  5. Slice each of the tomatoes halves into four to five thin half moon shaped slices, place on the oil coated bread quarters and lightly dust with salt and pepper.

  6. Tare the six basil leaves in half by following the stem line, and remove the stem, place three half pieces of basil on top of the tomatoes on each flat bread.

  7. Cut the fresh mozzarella in half lengthwise, then slice the two mozzarella halves into twelve to sixteen thin half moon shaped slices and place on top of the basil and tomatoes on each flat bread.

  8. Drizzle the remaining olive oil over the flat breads, then drizzle the balsamic reduction over each flat bread. 9. Dust each flat bread lightly with salt and serve immediately.
